Low Carb Chili Recipe

Here is the recipe for the chili I made earlier in the week. My family loved it even though it had no beans.  Beans have too many carbs for me.

Major hint: don't forget the tomato paste! At first I didn't add it, and Patrick and I kept looking at it,  We were puzzled, because it didn't look like chili.  So I reread the recipe and Duh me! forgot the tomato paste. Please add the tomato paste!




Low Carb Chili

Serves: 6

  •          2 pounds of ground beef
  •          8 oz. tomato paste
  •          3 tomatoes chopped
  •          1 red bell pepper chopped
  •          1 small onion chopped
  •          2 celery sticks chopped
  •          2 teaspoons cumin
  •          2 teaspoons chili powder
  •          ½ teaspoon black pepper
  •          1-1/2 teaspoons of garlic salt
  •          (Optional) 1 tablespoons of Adobe sauce or chopped Chiptole peppers
  •          2 or more cups of water


  1. Brown the meat in a medium large stove pot. Once almost finished, drain off fat and sprinkle the garlic salt over the meat.
  2. Add onions and peppers to pot and continue to cook for 1 or 2 minutes.
  3.  Add the tomatoes, celery, tomato paste, celery, water and seasonings to the pot. Mix.
  4. Bring to a boil. Reduce heat to low, cover pot and simmer for two hours. Occasionally stir the chili.
  5. Top with diced onions, cheese and sour cream.
  6.  Enjoy!
