Major hint: don't forget the tomato paste! At first I didn't add it, and Patrick and I kept looking at it, We were puzzled, because it didn't look like chili. So I reread the recipe and Duh me! forgot the tomato paste. Please add the tomato paste!
Low Carb Chili
Adapted from Andres Regalado
Serves: 6
- 2 pounds of ground beef
- 8 oz. tomato paste
- 3 tomatoes chopped
- 1 red bell pepper chopped
- 1 small onion chopped
- 2 celery sticks chopped
- 2 teaspoons cumin
- 2 teaspoons chili powder
- ½ teaspoon black pepper
- 1-1/2 teaspoons of garlic salt
- (Optional) 1 tablespoons of Adobe sauce or chopped Chiptole peppers
- 2 or more cups of water
- Brown the meat in a medium large stove pot. Once almost finished, drain off fat and sprinkle the garlic salt over the meat.
- Add onions and peppers to pot and continue to cook for 1 or 2 minutes.
- Add the tomatoes, celery, tomato paste, celery, water and seasonings to the pot. Mix.
- Bring to a boil. Reduce heat to low, cover pot and simmer for two hours. Occasionally stir the chili.
- Top with diced onions, cheese and sour cream.
- Enjoy!
